4-5 chicken breasts, cooked and minced 1 1/2 c. chopped celery 3/4 c. chopped green onion 1/2 c. seedless grapes, cut in half 1/2 c. chopped pepper, red for color 1/4 c. slivered almonds 8 oz. crushed pineapple, drained (reserve 2 tbsp. liquid) 8 oz. spiral pasta (spinach-tomato flavored) cooked and drained Combine all ingredients. DRESSING: 1 c. mayonnaise 2 tbsp. pineapple juice 1 tbsp. lemon juice Combine with chicken-pasta mixture. Add salt and pepper to taste. (If too dry, add more mayonnaise.) |
