CHICKEN STUFFED POTATO SKINS
 

1 chicken, cooked, boned & diced OR 2 (6 1/2 oz.) cans cooked chicken
3/4 tsp. salt
1/8 tsp. pepper
3 lg. baking potatoes (baked)
3/4 c. grated Parmesan cheese
6 slices Jack cheese
1/2 c. sour cream
1/2 c. mayonnaise
2 tbsp. chopped onion
2 tbsp. bread crumbs

Halve potatoes lengthwise and scoop out centers. In a bowl, mix together chicken, Parmesan cheese, sour cream, mayonnaise, onion, salt and pepper. Spoon mixture into potato shells. Place slice of Jack cheese on top and sprinkle with bread crumbs. Bake at 350 degrees for 30 minutes. Yield: 4 servings.
