WALNUT CHICKEN SALAD
 

1 chicken breast or 1 thick slice turkey breast from Deli (about 1/2 lb.)
3/4 c. sour cream
2 tbsp. cider vinegar
2 tsp. brown sugar
1/2 med. head lettuce, shredded
3/4 c. chopped walnuts

Simmer chicken breast to cover for 10 minutes. Dice and chill. Mix sour cream, vinegar and brown sugar in large serving bowl. Add lettuce, chicken and walnuts; toss until coated with dressing.

Wash whole head of lettuce. Wrap the extra leaves in a dish towel and place in a plastic bag. Lettuce will stay fresh, crisp and ready to use for up to a week.
