TURKEY SAUSAGE, PEPPERS AND ONIONS
 

1 pkg. Italian turkey sausage
2 tbsp. olive oil
2 c. thin onion wedges
2 med. peppers, cut in wedges
1 garlic clove, crushed
1 (8 oz.) pkg. mushrooms, quartered
1 (14.5 oz.) can whole peeled tomatoes with juice

Halve sausage links crosswise, cover and simmer in 1/4 inch water in a large skillet 8 to 10 minutes. Uncover and cook until liquid is absorbed and sausages are browned. Transfer to a side dish. Heat oil in skillet, add onions and peppers, saute 2 minutes. Cover and cook over low heat, stirring occasionally for 10 minutes. Add garlic and mushrooms, saute 1 minute. Stir in tomatoes with juice and cooked sausage. Simmer uncovered, stirring to break up tomatoes until liquid cooks down; 10 minutes.
