2 boneless chicken breasts (1 lb.) cut into 3 inch long strips 1 lb. shelled raw shrimp 3/4 c. chopped onion 1 c. chopped celery 3/4 c. chopped bell pepper 1 c. sliced mushrooms 1 stick butter 4 c. chopped fresh tomatoes, scalded and skinned 1/3 c. chopped parsley 1 clove garlic, minced 1/3 c. dry white wine 1/4 tsp. sugar 3 tsp. Gumbo File' Salt and pepper to taste Saute onions, celery, peppers, garlic and chicken in butter for 5 minutes over low heat. Add tomatoes, wine, mushrooms, sugar, Gumbo File and parsley. Simmer for 25 minutes covered. Add shrimp and simmer until shrimp turns pink, about 5 minutes. Salt and pepper to taste. Serve over rice. Serves 8. |
