2 tbsp. olive oil 1 lb. chicken pieces Lg. red pepper, sliced thin Lg. green pepper, sliced thin Lg. onion 3 tbsp. soy sauce (low salt) 3 garlic cloves, chopped 1 c. sliced mushrooms In a large skillet saute onions and garlic in olive oil. Add chicken, peppers, mushrooms and soy sauce. Cover skillet, cook until chicken is done. Serve over rice. |
