8 chicken cutlets Salt & pepper 1/2 lb. mushrooms 2/3 c. white wine 4 tbsp. Madeira Mozzarella cheese 8 slices bacon Coat cutlets with flour, salt and pepper. Fry 6 to 8 minutes in butter. Put in baking dish. Saute mushrooms, put over chicken. Add wines in same pan and scrape over high heat. Lower heat and simmer 5 minutes to reduce liquids. Pour over chicken. Top with bacon (optional) and Mozzarella. Bake at 300 degrees for 40 minutes. |
