Clean and wash chicken breasts; season as desired. Beat eggs; dip chicken in the egg batter. Roll each fillet in bread crumbs until covered. Spray oil onto skillet and brown both sides of fillets.
Place fillets in a Corning Ware baking dish. Pour on drained fruit cocktail and light Russian dressing. Grate cheese over mixture. Cook at 400 degrees for 1/2 hour. Serve with vegetables and bread. They will be very moist and each fillet will have less than 300 calories.
