1 c. chopped fresh mint, dill and parsley (equal proportions or to taste) 2 cloves garlic, minced 6 boned chicken breasts, skinned and halved (4 1/2 lb.) Salt and pepper to taste 2 lemons, fresh 4 tbsp. butter Preheat oven to 350 degrees. Mix fresh herbs and garlic together in a small bowl. Flatten chicken breast. Arrange each piece of chicken on a large piece of tin foil, season with salt and pepper. Sprinkle the herbs evenly over herb and garlic mixture. Slice the lemons and put 2 or 3 slices over each breast. Dot with butter and seal the packets. Set on a baking sheet and bake for 30 minutes. Enjoy the aroma when you open. Serve with rice. |
