POTATO BEEF PIE
 

4 c. frozen hash brown potatoes, thawed
2 tbsp. vegetable oil
1 1/2 lbs. lean ground beef
3/4 c. chopped onions
1/2 c. chopped green pepper (optional and may use frozen)
1 (8 oz.) can tomato sauce
3/4 c. water
1 (1 1/2 oz.) sloppy joe seasoning mix
3/4 c. shredded Cheddar cheese

Combine thawed potatoes and oil in 10 inch pie pan or baking dish. Press across bottom and up sides to form a shell. Bake uncovered at 425 for 15-20 minutes. Reduce temperature to 350.

While baking potatoes, brown beef and drain if necessary. Add onion, green peppers, and cook for 3-4 minutes. Then add tomato sauce, water and seasoning mix. Mix thoroughly. Heat to boiling and simmer 10 minutes. Turn meat mixture into potato shell. Sprinkle cheese over top. Bake at 350 for 30-35 minutes or until cheese is melted and bubbly.
