SMOKED SAUSAGE & AU GRATIN POTATOES
 

1 lb. smoked sausage
1 lg. onion
1 tbsp. oil
1 pkg. au gratin potatoes
2 1/2 c. hot water
1/4 tsp. pepper
1 can mixed vegetables, drained
1 c. shredded cheddar cheese

Cook sausage and onion in oil in large skillet until onion is tender, about 5 minutes. Stir in potatoes, pepper, potatoes mix and water. Cover and simmer, stir occasionally, about 10 minutes. Add vegetables. Cook about 10 minutes. Add cheese, cover and cook about 10 minutes or until cheese is melted. Serves 4 to 5.
