2-3 c. flour 2 tsp. salt 1/4 tsp. nutmeg 2 c. mashed potatoes 1/2 c. chopped parsley 2 egg yolks 1 1/2 c. sliced mushrooms 1/2 c. butter, melted Combine potatoes and egg yolks; add flour, salt and nutmeg. Work mixture into a firm dough, adding more flour if necessary. Knead on a floured board until dough is smooth. Roll out dough to 1/16 inch thickness. Cut noodles in narrow strips (may let dry for a while). Boil noodles in salted water for 7 minutes. Drain. Saute mushrooms in butter for 3 minutes; add parsley. Toss mushrooms with noodles and season to taste. Serves 8. |
