POTATO & HAM CHEDDAR CHOWDER
 

1 lg. onion, chopped
1/2 c. chopped red or green pepper
1/2 lb. ham, diced
2 tbsp. butter
4 med. potatoes, peeled & diced
1 can (13 3/4 oz.) chicken broth
1 c. milk
1 container (10 1/2 oz.) Spreadery cheese snack med. cheddar cold pack cheese product
1/2 tsp. ground white pepper
Parsley

Saute first 3 ingredients in butter in saucepan. Add potatoes and broth. Bring to a boil; reduce heat. Cover; simmer 15 minutes or until potatoes are tender. Stir in milk, Cheese Snack and pepper. Cook over low heat until Cheese Snack is melted and chowder is hot, stirring occasionally. Sprinkle with parsley. Serves 6. Preparation time: 20 minutes. Cooking time: 35 minutes.
