BOILED POTATOES IN JACKETS
 

Scrub desired amount of potatoes cutting out any bad spots. Boil in large kettle of salted water until done when the skin splits when pinched with fingers or when poked with a fork. The fork comes out of the potatoes easily. Drain off water. Potatoes in the jackets have lots of uses. Peel and mash, add butter, salt and pepper or serve with gravy. Grate them makes hash browns. Peel, slice and fry in butter. Use for potato salad or peel and cut up in stew.
