Dough for single crust pie pastry 1/4 c. sugar 1/4 tsp. salt 1/4 tsp. cinnamon 1/4 tsp. nutmeg 1/4 tsp. grated lemon rind, optional 1 tbsp. butter 5 to 7 green or other tart pie apples, pared & sliced CRUMB TOPPING: 2/3 c. granulated brown sugar 1/4 c. granulated sugar 3/4 tsp. water 2/3 c. sifted all-purpose flour 1/4 tsp. salt 1/4 c. butter Line 9 inch oven-proof glass pie plate with pastry. Blend granulated sugar, salt, spices, lemon rind and butter in large mixing bowl. Toss apples. Arrange in pastry-lined plate. CRUMB TOPPING: Mix sugars and water thoroughly in mixing bowl; add remaining ingredients and blend with pastry blender to form coarse crumbs. Spoon topping over apples. |
