CRUST PEACH COBBLER
 

1 1/4 c. flour
1/4 c. sugar
1/4 tsp. salt
1/4 tsp. ground ginger
1/4 tsp. cinnamon
1 1/4 stick of butter

Put flour, sugar, butter, salt, ground ginger, and cinnamon in large bowl and mix together until it is coarse crumbs. In an ungreased 11 x 8 inch pan, pat crumb mixture evenly over bottom and sides of pan. Save 1/2 cup of the crumbs for top.

FILLING:

6 to 8 ripe peaches
2/3 c. sugar
1/3 c. sour cream
2 egg yolks
3 tbsp. flour
1 1/2 tsp. vanilla

Bake about 20 minutes or until golden in 350 degree oven. Remove and cool. Peel peaches and cut in 1/4 inch thick slices. Arrange slices over cooled crust. Combine the other filling ingredients into medium bowl. Mix well. Pour over peaches and sprinkle the remaining crumb mixture over all. Bake until filling is set about 40 minutes at 350 degrees. Let cool. Serve warm or with whipped cream.
