EASY AS PIE ALMOND FINGERS
 

1 pkg. Pillsbury pie crust mix or 2 Pillsbury pie crust sticks, crumbled
1 c. ground almonds
1/3 c. sugar
1/3 c. butter, softened
1 tsp. vanilla
1/4 tsp. almond extract

Heat oven to 325 degrees. In large bowl, combine all ingredients except powdered sugar. Blend at low speed just until crumb mixture forms; form into ball. Shape into fingers using 1 teaspoonful of dough. Place 1 inch apart on ungreased cookie sheets.

Bake at 325 degrees for 10-15 minutes or until light golden brown around edges. Cool 2 minutes. Remove form cookie sheets. Sprinkle with powdered sugar. Cool completely; roll in powdered sugar.
