SHOE FLY PIE
 

2/3 c. granulated sugar
3 c. flour
1/2 c. shortening (Crisco or equivalent) - 8 tbsp.
1/4 tsp. soda
1/2 tsp. baking powder
1 c. molasses (dark if available)
1 c. boiling water
1 tsp. soda
Brown sugar
Unbaked pie crusts

Mix first five ingredients together like crumbs. Set aside. Mix molasses and soda together, then add boiling water. Stir and this mixture will foam.

Line the unbaked pie crust with brown sugar, then pour liquid mixture over brown sugar. Then with your hands, sprinkle lightly the crumb mixture over the wet mixture.

Bake in hot oven at 425 degrees for 15 minutes. Then at 375 degrees for about 40 minutes. Test with a silver knife and pie is done when knife comes clean of liquid. The crumbs will always pull off on knife. Don't overcook or pie will be dry. WHEN BAKING PIE COVER LIGHTLY WITH FOIL IF GETTING TOO BROWN. THIS PIE FREEZES WELL.
