SINFULLY DELICIOUS CHOCOLATE BERRY PIE
 

30 chocolate wafer cookies, crushed (1 1/2 c.)
1/3 c. butter, melted
1/2 c. plus 2 tbsp. semi-sweet chocolate morsels (divided)
1 (8 oz.) pkg. cream cheese, softened
1/4 c. firmly packed brown sugar
1/2 tsp. vanilla extract
1 c. heavy cream, whipped or 16 oz. Cool Whip
1 pt. fresh strawberries, hulled
1 tsp. shortening

Combine cookie crumbs and butter in medium bowl, stirring well. Firmly press over bottom and sides of lightly greased 9 inch pie plate. Bake at 350 degrees for 10 minutes. Let cool completely in glass bowl. Melt 1/2 cup chocolate chips about 1-1 1/2 minutes in microwave, stirring often until melted cool to lukewarm.

Beat cream cheese at medium speed until smooth. Add brown sugar and vanilla, beating well. Add cooled chocolate, beat well. Fold whipped cream into chocolate mixture. Spoon into cooled crust. Cover and chill at least 8 hours. Reserve 1 strawberry for garnish. Slice remaining strawberries. Arrange slices over cooled pie. Place reserved berry in center.

Combine remaining 2 tablespoons morsels and shortening. Heat until melted cool slightly drizzle melted chocolate mixture over strawberries. Variation: I also make this with raspberries.

1 (3 oz.) pkg. raspberry gelatin
1/4 c. sugar
1 1/4 c. boiling water
1 (10 oz.) pkg. frozen raspberries
1 tbsp. lemon juice

In medium bowl stir sugar and Jello into boiling water until dissolved then add frozen berries and lemon juice. Stir. Cover and refrigerate, stirring frequently until mixture mounds when dropped from spoon. Then pour over chilled pie instead of adding fresh strawberries. Chill until set. Drizzle chocolate over and serve.
