PICKLED RED CABBAGE
 

Slice red cabbage and sprinkle each layer with salt. Let it drain 2 days. Put into jar and pour enough boiling vinegar to cover. Put in a few beets. If spice flavor is desired, add spice to vinegar and boil. Cauliflower put in after being salted will turn pink. Good with roast beef.
