PICKLED KNACKWURST
 

2 1/2 c. water
1 3/4 c. white vinegar
2 tbsp. sugar
1 1/2 tsp. salt
20 peppercorns (whole pepper)
16 whole allspice

Mix all together and simmer for 10 minutes. Cool to lukewarm. Into a 2 quart jar slice, 8 knackwurst into 1/2 inch slices, alternate slices with rings of onion (1 Bermuda onion is usually enough). Pour marinade over, cover and refrigerate for 3 days. Keeps well for several weeks.
