MACARONI WITH CASHEW - PIMENTO CHEESE
SAUCE
 

Bring to a boil 2 quarts water with 1 teaspoon salt. Add and boil until tender:

CASHEW - PIMENTO CHEESE SAUCE:

Whiz following ingredients in blender until smooth (except bread crumbs) : 2 tbsp. lemon juice 1 tsp. onion powder 1/4 tsp. garlic powder 2 c. water 1 (4 oz.) jar pimentos 2 tsp. salt 1 1/2 c. bread crumbs (soft)

Place drained and rinsed macaroni in flat casserole dish. Pour sauce over the top. Bake covered for 30 minutes at 350 degrees. Uncover and top with soft bread crumbs or cubes; then bake for 15 additional minutes. Yield 6 to 8 servings.
