WHITEFISH IN FOIL ON THE GRILL
 

2 lbs. whitefish fillets, fresh or frozen
2 green peppers, sliced
2 onions, sliced
1/4 c. butter, melted
2 tbsp. lemon juice
2 tsp. salt
1 tsp. paprika
Dash pepper

Thaw fillets, if frozen. Cut into serving-size portions. Cut 6 pieces of heavy-duty aluminum foil, 12x12 inches each. Grease lightly. Place a portion of fish, skin side down, on foil. Top with green pepper and onion.

Combine remaining ingredients. Pour sauce over fish. Close foil tightly making 6 packages. Place packages on a grill about 5 inches from moderately hot coals. Cook for 45-60 minutes or until fish flakes easily when tested with a fork. Serves 6.
