HERB BUTTER
 

1/2 lb. butter
1 tbsp. Spice Island hickory smoke salt
1 tbsp. Spice Island beau monde salt
1/2 tsp. fresh ground black pepper
1 clove garlic, minced
1 tbsp. fresh thyme (1 tsp. dried)
2 tbsp. fresh tarragon (2 tsp. dried)
2 tbsp. fresh chives or 1/2 tsp. onion powder
1/8 tsp. cayenne pepper

Soften butter in bowl or pottery crock. Add all other ingredients and mix well. Let it sit on counter for several hours, in order for flavors to blend, before using. Use to baste grilled or broil chicken, steak, or lamb chops. This keeps for months in the refrigerator. Soften each time before using. Other herbs, such as oregano, rosemary, dill may be used, also.
