MANGO SALAD
 

3 (3 oz.) pkgs. lemon gelatin
3 c. boiling water
1 (29 oz.) can mangos, drained (save liquid)
8 oz. pkg. cream cheese
Juice of 1 lemon
1/2 c. mayonnaise
1/2 c. Cool Whip

You can also use peaches, pears, and apples.

Dissolve gelatin in boiling water. Drain mangos, reserving the liquid. Blend mangos with the cheese. Gently add this to the gelatin. Add the mango and lemon juices. Pour into a 9 x 13 inch dish or a 3 quart mold. Chill until set. Mix mayonnaise and Cool Whip. Spread over the chilled salad or dollop as a dressing. Serves 12.
