2 tbsp. wine vinegar 1 tsp. Dijon mustard 1/2 tsp. salt Pinch of cayenne pepper 1 tbsp. honey 6 tbsp. oil 1 1/2 tsp. poppy seeds SALAD: 1/2 sm. red onion 1 (11 oz.) can mandarin oranges, drained 1 sm. head lettuce, dried, cold & torn into bite-size pieces Combine dressing ingredients in a bottle. Shake well and set aside. Peel and slice onion into very thin rings. Mix together, in a large bowl, mandarin oranges, onion rings and lettuce. Pour dressing over salad. Toss and serve. |
