BEEF OVEN HASH
 

A good way to use leftover beef roast.

1 1/2 c. cubed cooked beef
1 c. cubed cooked potato
1 (6 oz.) can (2/3 c.) evaporated milk
1/4 c. finely snipped parsley (optional)
1/4 c. finely chopped onion
2 tsp. Worcestershire sauce
1 tsp. salt
Dash of pepper
1/3 c. crushed saltine crackers
1 tbsp. butter

Lightly stir together cooked beef and potato cubes, evaporated milk, parsley, onion, Worcestershire sauce, salt and pepper. Turn into lightly greased 1-quart casserole. Toss together 1/3 cup (7 or 8) crushed saltine crackers with 1 tablespoon melted butter and sprinkle on top. Bake, uncovered, at 350 degrees for 30 minutes.
