HAM SLICES WITH SPINACH
 

1 pkg. (10 oz.) frozen chopped spinach
1 sm. stalk celery, finely chopped
1 can (4 oz.) mushroom stems & pieces, drained
2 tbsp. chopped onion
2 tbsp. vegetable oil
1/4 tsp. salt (opt.)
2 fully cooked smoked ham slices, 1/2 inch thick (about 1 1/2 lbs.)
1 tbsp. butter, melted
Horseradish Sauce

Cook spinach as directed on package; drain. Cook and stir celery, mushrooms and onion in oil until celery is tender. Stir in spinach, salt and pepper. Place 1 ham slice in ungreased shallow baking dish making diagonal cuts along hams edges. (This keeps meat from curling.)

Spread ham slice with spinach mixture. Top with second ham slice making diagonal cuts along the edge. Brush second slice with butter. Cover and cook in 325 degree oven for 15 minutes. Uncover and cook 15 minutes longer. Serve with Horseradish Sauce.

HORSERADISH SAUCE:

Beat 1/2 cup chilled whipping cream in chilled bowl until stiff. Fold in 3 tablespoons well-drained prepared horseradish and 1/2 teaspoon salt
