1 roast beef, thawed at room temperature Salt and pepper to taste Place roast in pan and season, if desired. Cover pan tightly with foil. Preheat oven to 500 degrees. Cook roast beef as follows 4 minutes per pound for rare, 5 minutes per pound for medium, and 6 minutes per pound for well done. Turn oven off. Leave roast in oven for 2 hours.
