MEAT LOAF ROLL
 

1 pkg. frozen broccoli or spinach
2 lbs. ground beef
2 eggs
3/4 c. soft bread crumbs
1/4 c. catsup
1/4 c. milk
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. oregano leaves
1 pkg. smoked sliced ham
3 slices cheese (3 x 3 inches), cut diagonally into halves

Rinse frozen broccoli or spinach under cold running water to separate, drain. Mix ground beef, eggs, bread crumbs, catsup, milk, salt, pepper and oregano together and put mixture into a rectangle (12 x 10 inches) on a piece of aluminum foil (18 x 15 inches). Arrange broccoli on meat mixture to within 1/2 inch edge, sprinkle with a little salt. Arrange ham slices over broccoli.

Roll up rectangle carefully, beginning at 10 inch side and using the foil to lift. Press edges and ends to roll and seal.

Place on rack in shallow pan. Cook uncovered in 350 degree oven for 1 1/4 hours. Remove from oven. Overlap cheese on top; bake just until cheese begins to melt, about 1 minute longer. Garnish with celery leaves on other greens.

NOTE: CENTER OF MEAT LOAF MAY BE SLIGHTLY PINK DUE TO HAM. Serves 6 to 8.
