Green tomatoes usually end up in pickles or relishes. Here's a mincemeat that combines them with apples, butter, fruit, spices and brandy. Use to fill pies, tarts or warm it and serve over ice cream. 1 tbsp. pickling salt 1 lg. orange 10 c. peeled chopped apples (10 lg.) 1 c. seeded raisins 2 c. dark seedless raisins 1 1/2 c. halved candied cherries 1/2 c. chopped candied citron peel 1/2 c. chopped pineapple 3/4 c. butter 3 1/2 c. firmly packed brown sugar 1/2 c. cider vinegar 2 tsp. cinnamon 1 tsp. freshly grated nutmeg 1/2 tsp. each allspice, cloves & ginger 2/3 c. brandy or rum
In a colander, combine tomatoes and salt; let stand 1 hour. Rinse and drain. Transfer to a bowl, cover with boiling water and let steep 5 minutes. Drain thoroughly. Quarter, seed and grind orange medium finely in a food grinder or processor.
