1 (4 rib) roast 2 tbsp. flour 1 tsp. black pepper 1 clove garlic, sliced 1 tsp. salt Rub roast with flour, salt and pepper. Make slits in the fat and insert garlic slices. Roast for 2 hours at 375 degrees. Remove fat from top of roast. Return to oven for one half hour. This will produce a nice combination of rare, medium and well cooked meat. |
