GREEK ZUCCHINI MEAT LOAF
 

2 lb. lean ground beef
2 onions, peeled & chopped
3 med. size zucchini
1/2 c. chopped fresh parsley or 2 tbsp. dry
1/4 c. tomato sauce (ketchup could be substituted)
1 1/2 to 2 tsp. salt
1/4 tsp. pepper or more
4 eggs, beaten
1/2 c. grated cheese (Parmesan or med. to sharp cheddar)

Brown onion and hamburger together. Drain off excess fat. Add parsley. Meanwhile, wash zucchini and grate it coarsely. Do not peel. A food processor could be used. Add to hamburger mixture along with tomato sauce, salt and pepper. Cook uncovered 5 to 10 minutes. Discard some of the liquid if any forms. Taste for seasoning. Mix eggs with cheese, mix with hamburger mixture, pour into 13 x 9 x 2 inch baking dish and bake 35 minutes at 375 degrees, uncovered. Cut in squares to serve. Serves 8 to 10. Recipe may be halved.
