BEEF ENCHILADAS
 

1 pkg. flour tortillas
1 lg. can enchilada sauce
1/2 to 1 lb. sharp cheese
1 can chopped olives
1 med. onion, chopped
1 1/2 lb. ground beef

Fry beef and onion until browned. Add small amount of enchilada sauce and simmer. Warm remainder of sauce in pan large enough to dip tortilla, one at a time.

Lay flat and add above ingredients 2 to 3 tablespoons meat mixture, olives, cheese and roll. Place seam side down in large 9x13 inch pan. Top with remainder of sauce, cheese, and olives. Bake at 300 degrees for 20 minutes.
