6-7 oz. sirloin, cut in pieces on an angle Equal portions of soy sauce, ginger sauce and cooking wine Mixture of cornstarch and water 1/2 tbsp. sugar Crushed garlic Cooking oil Bok choy, cut on an angle Celery, cut on an angle Pea pods (snow peas) Tomatoes, chopped Green peppers, chopped Water chestnuts, sliced Mushrooms Chicken or pork broth Thick sauce (molasses) 1/2 tbsp. oyster sauce 1/2 tsp. salt Heat wok to red hot. To 3 tablespoons of oil, add the beef and cook until about 60% done. Add 1 tablespoon of the sauce mixture, 1 teaspoon of the cornstarch mixture, 1/2 teaspoon sugar and crushed garlic to taste. Remove the beef, add 1 tablespoon of oil and stir fry the bok choy, celery, peppers, chestnuts, and mushrooms. Stir fry, then add broth, 2 more tablespoons of the cornstarch mixture, 1/2 teaspoon salt, the rest of the sugar and continue to stir fry. Re- add the beef, add the pea pods, tomatoes, molasses and oyster sauce. Stir fry to mix all ingredients and serve. |
