ROYAL RIB EYE ROAST
 

1/4 c. prepared mustard
2 tsp. garlic salt
1/2 tsp. pepper
1 (4 lb.) beef rib eye roast

In small bowl, stir first 3 ingredients until smooth. Place rib eye roast, fat side up, on small rack in open roasting pan. Spread top of roast with mustard mixture. Insert meat thermometer into center of roast. Roast meat in 350 degree oven about 1 hour and 20 minutes or until thermometer reaches 140 degrees for rare or until desired doneness. Partly cooked potatoes can be arranged in roast drippings to finish cooking and brown.
