BEEF FAJITAS
 

1 lb. lean, boneless sirloin or tenderloin steak
2 med. tomatoes, sliced in wedges
1 lg. yellow pepper
1 lg. green pepper
1 lg. red pepper
1 lg. onion, sliced
1 tsp. oregano
1/4 tsp. garlic powder
1/2 tsp. chili powder
1 tsp. oil
1 pkg. flour tortillas (10)
Orange juice, as needed

Marinate steak strips in orange juice 3 to 4 hours before cooking.

Trim all visible fat from meat. Slice steak into 1/8 inch strips. Cut 3 peppers into strips. Heat oil in hot skillet or electric wok until hot. Stir-fry beef strips until nearly done - about 2 to 4 minutes.

Remove beef and keep warm in another dish, covered. Stir-fry onions first, until crisp tender; then add all three peppers and spices and stir-fry until barely tender. Add orange juice to wok during vegetable cooking if more liquid is needed.

Add beef and tomatoes and heat thoroughly. Serve with flour tortillas, salsa and lowfat yogurt or light sour cream. Makes 10 fajitas. Each fajita is 170 calories and 4.5 grams fat.
