1 lb. beef liver 2 lb. boneless stew beef 2 c. plain flour 1 c. self-rising flour 1 med. onion 1 1/2 tbsp. sage Black pepper Salt Boil liver and beef separately until tender. Salt. Grind liver. Mix with liver broth. Pour over flour, onion, sage, pepper and salt. Make a stiff batter. Remove beef from broth. Set aside. Drop batter from teaspoon into boiling beef broth a layer at a time. Stir lightly. Cook until done. Add small pieces of beef back in pot with nips. |
