1 lb. beef stew meat
1 lg. onion, sliced
1 lg. sweet pepper
1 pkg. flour tortillas
Cilantro
Shredded Cheddar cheese
1 pkg. Fajita seasoning
1/4 c. water
Picante sauce
Thinly slice meat. Brown meat in a skillet. Add sliced onion and sliced pepper. Cook down. Add fajita seasoning, 1/4 cup water and cilantro to taste; blend well. Bring to a boil; reduce heat and simmer, uncovered, 3 to 5 minutes, stirring occasionally.
Microwave tortillas between 2 microwave proof plates. Tortillas get warm and don't dry out. Place 1/2 cup filling on each tortilla, sprinkle with cheese, add picante sauce to taste.
