GOLDIE'S MEAT LOAF
 

1 1/2 lbs. ground beef, veal or turkey
Grated onion to taste
Salt & pepper to taste
1/4 c. matzo meal
1 egg (or 2 whites)
2 tbsp. hot water
1/2 pkg. onion soup mix
1 sm. can whole mushrooms
1 sliced or slivered carrot
1/2 c. raw rice, soaked in cold water, then drained
1/4 c. chopped parsley
2 chopped green onions
1 sm. can tomato juice
1 tbsp. water
2 tbsp. barbecue sauce or catsup

Put layer of rice on bottom of greased loaf pan. Sprinkle with parsley and green onions, salt and pepper. Add onion soup, matzo meal, egg and hot water. Mix well and form loaf. Place on rice. Mix tomato juice with water, salt and barbecue sauce. Place carrots and mushrooms around meat loaf. Pour tomato juice mixture over meat and vegetables. Bake at 325 degrees for 40 minutes, then reduce temperature to 300 degrees and bake for an additional hour or until done. Serves 6.
