1 c. diced onion 2 tbsp. fat 1 c. chopped tomato 1 c. green peppers, diced 1 c. diced celery 2 tbsp. brown sugar 1/2 tbsp. dry mustard 2 c. stock from roast or soup 1 c. catsup Salt and pepper to taste 3 racks of spareribs Fry onion in fat; add remaining ingredients. Cook slowly 1 hour. Marinate par boiled spareribs in sauce for 2 hours. Lay on grill, bone side down first; cook 8 inches from coals until very well done. Baste often during last 20 minutes. |
