POT ROAST
 

4 lb. beef bottom round
2 bay leaves
1 lg. red onion, diced
2 c. water
Adobo seasoning
2 lbs. carrot sticks
2 lbs. green beans
1 tbsp. oil
8 potatoes, peeled and halved
Pressure cooker

Cut beef in half. Season with Adobo. Brown beef and onions in 1 tablespoon oil. Add bay leaves and water. Cook 30 minutes in pressure cooker on medium high heat. Open and add carrots and beans. Cook 5 minutes. Remove all from pot. Add potatoes (preferably Maine) to remaining water and cook 7 minutes.
