HAMBURGER SALAMI
 

5 lbs. hamburger or moose meat
1 tbsp. garlic powder
5 rounded tsp. salt
2 1/2 tsp. mustard seed
2 1/2 tbsp. coarse black pepper
1 tbsp. liquid smoke

Mix the above well, cover and refrigerate for 2 days. The third day, form into five rolls. Place on rack of broiler pan in 140 degree oven for 8 hours, turn every 2 hours.
