1 or 2 lb. smoked sausage 1 tbsp. butter 1 med. onion, cut in wedges 2 (16 oz.) can sauerkraut 1 c. apple juice 2 med. apples, cut in wedges 4-6 med. potatoes, cut in half Salt and pepper Brown sausage in butter in a 1 1/2 quart casserole. Arrange onions, sauerkraut, apples, potatoes around sausage. Top with apple juice, salt, and pepper; cover tightly. Simmer on low heat 30-40 minutes until potatoes are tender. |
