1 1/2 lb. veal round, thinly sliced 2 tbsp. butter 1 tbsp. oil 1 (4 oz.) can mushrooms 1 c. chicken broth 1 clove garlic 1 sm. onion, sliced 1/2 c. tomato juice 1 tbsp. minced parsley Trim veal, roll in flour, salt and pepper. Pound and cut into 3 inch squares. Heat butter and oil; add bruised garlic and cook. Brown meat slowly and remove. Add onions and mushrooms; saute. Add browned meat and remaining ingredients. Cover closely and simmer for 40 minutes. Serves 4. |
