BONANZA BURGERS
 

1 egg
4 tbsp. prepared yellow mustard
4 tbsp. mayonnaise
1 1/2 lbs. ground beef
1 c. soft bread crumbs
Salt
Pepper
1 tbsp. pickle relish, drained (if desired)
1 loaf French bread, split
Lettuce

Lightly beat together egg and 2 tablespoons each of mustard and mayonnaise. Add ground beef and bread crumbs; mix lightly. Shape into 8 patties. Grill in hinged wire rack over hot coals for 10 to 15 minutes, turning once, until done. Season with salt and pepper. Combine relish with remaining 2 tablespoons each mustard and mayonnaise. Toast bread over grill. Arrange cooked hamburgers in a row on bottom half of bread. Spread with mustard mixture. Add lettuce, if desired. Cover with top half of bread. Slice into separate servings, one hamburger patty per person. Yields 8 servings.
