Select two pork tenderloins of equal size; split them lengthwise, but not all the way through, and flatten (with wood mallet or other means).
Season with salt and pepper. Spread well seasoned bread stuffing over one; lay the other on top and sew or skewer edges together. (I use toothpicks.)
Place 4 slices of bacon over top. Place on rack in open roasting pan and bake at 325 to 350 degrees for 1 1/2 hours.
STUFFING: Use 2 or 2 1/2 cups of Croquettes plus some onion and celery cooked in butter; add 1/3 or 1/2 cup broth or hot water. Season and stuff tenderloin.
