MINCED BEEF AND CORNBREAD PIE
 

1 tbsp. butter
1 lb. ground beef
1/3 c. chopped onion
1 c. kidney beans (cooked)
1/4 tsp. chili powder
1 1/2 tsp. salt
1 tsp. Worcestershire sauce
1 c. cooked tomatoes
1/2 c. all purpose flour
3/4 c. yellow corn meal
2 tsp. baking powder
1 tbsp. sugar
1 egg, well beaten
1/2 c. milk
2 tbsp. melted butter

Heat butter in heavy skillet. Add beef and onion. Fry until brown. Add beans, chili powder, 1/2 teaspoon salt, Worcestershire sauce and tomatoes. Mix well and simmer covered for 15 minutes. Spoon into oiled 9 inch pie pan.

Mix and sift together flour, corn meal, baking powder, sugar and remaining salt. Combine beaten egg and milk. Add to flour mixture, stirring until well mixed. Stir in melted butter. Pour batter over beef mixture in pan. Bake in hot 425 degree oven for 20 minutes. To serve, invert on hot platter. Serves 6.
