BRANDIED PORK LOIN
 

Marinating time: 2 hours. Baking time: 1 3/4 hours. Oven temperature: 450 degrees and 350 degrees. Serves: 4 to 6.

3 lbs. pork loin roast
1 tbsp. Dijon-style mustard
1 tsp. grated orange rind
1/4 c. orange juice
1/4 c. apple brandy
1/4 tsp. each salt & pepper
2 tbsp. brown sugar

1. Rub the roast with the mustard. Place roast in small glass baking dish.

2. Combine the orange rind, brandy, orange juice, salt and pepper. Spoon all over the meat.

3. Marinate at room temperature for 2 hours, turning and basting occasionally.

4. Reserve the marinade. Press brown sugar into the meat. Baste with some of the marinade.

5. Bake at 450 degrees for 10 minutes. Lower heat to 350 degrees. Bake for 1 hour and 35 minutes or until thermometer registers 160 to 165 degrees. Continue basting during roasting.

6. Remove to serving dish. Cut in even slices. Skim fat from pan. Use any juices to spoon over meat, if desired.

TIPS: You may use a boneless pork roast. Allow 30 to 35 minutes roasting time per pound.

Good served with: Oven-roasted potatoes, sauteed onions and apples, French rolls and sparkling cider.
