PORK TACOS
 

Medium pork roast
1 green pepper, sliced
1 sm. onion, sliced
1 pkg. taco mix
3/4 c. tomato sauce
Salt & pepper to taste
1 tsp. flour mixed with 2 tbsp. water

Put roast pork on a 9"x13" pan or roaster. Arrange pepper and onion around it. Salt and pepper to taste. Add enough water to cover half of roast. Bake for 1 1/2 to 2 hours until tender at 375 degrees.

When it's done it should actually fall apart. Remove onions and pepper. Shred or cut roast and place back into its own juice in roaster or crock pot. Add taco mix and tomato sauce and flour mix. Mix and bake or crock pot for another 30 minutes. Serve on warm tortillas and top with lettuce, tomatoes, baked peppers and onions. Top with sour cream and cheese.
